He honed his skills under Masanobu Nakamura, the owner of Sushi Nakamura in Roppongi, which is also a Michelin-starred restaurant. Independent in 2020. The restaurant was renamed ``Sushi Eishin'' and relocated from Azabu Juban to Omiya, Saitama Prefecture in April 2023 in pursuit of further evolution.
Food Uses the legendary "Fujita tuna".
Fujita's tuna is a phantom dish only known to those in the know and only available at a few Michelin-starred restaurant. Among them, we only use parts that can be purchased by craftsmen with whom we have built relationships of trust.

The cypress counter is kept as horizontal as possible to maintain a sense of distance from customers, while creating a comfortable space with a Matsubaya bonsai in the center that can only be seen outside of Tokyo at Eishin.
