銀座にあるワインバー「チーズ＆ワインレストラン村瀬」
フランスチーズ鑑評騎士“シュバリエ”やシガーの資格もあるオーナーソムリエ兼シェフは村瀬さん。ホテルオークラ、ホテル西洋銀座でバーテンダーやソムリエを経験後、2002年 銀座にオープンして18年目。
ワインとチーズのマリアージュ、農家製を中心に約30種類のチーズとニュージーランド、オーストラリアのブティックワイナリーを中心に常時230種類以上のワインが用意。北海道の製造メーカーの特注ラクレット専用オーブンで、パリパリに焼いたチーズを食べられるのは、ここだけのオリジナルとのこと。
ランチメニュー・手打ちパスタ（からすみorパルミジャーノ）、ラクレット、オリジナルシーザーサラダ、天然金目鯛を使った地中海風グラタン、鴨の冷製パスタ、スパイシー野菜カレー。すべてに、ジャガイモグラタン・ガーリックトースト添えが付きます。

「ジャガイモのグラタン ドフィノア風・ガーリックトースト添え」
フランスのドフィーネ地方の代表的な郷土料理、チーズにはクセがなく、じゃがいもとよく調和しています。
【メイン】
「天然金目鯛を使った地中海風グラタン」
具材には高知県室戸の天然金目鯛、ナス、ジャガイモ、玉ねぎ、トマト、ズッキーニなど華やかなお野菜たっぷり、真ん中に落とし卵。ラタトウイユやカポナータと具材は同じでも煮込みではないのであっさりめ。
これにまったくベシャメルソース（ホワイトソース）を使わず、表面にパルミジャーノ・レッジャーノチーズを振り、グリュエールと8か月熟成のコンテ、これに旨味の強い鯛からのお出汁・スープドポワソンや、野菜からのお出汁で構成した地中海風グラタン。半熟卵がのって、うまみが増加。これもある意味、トロトロチーズを絡めていただくラクレット風。バターや生クリームを使わないので、コクがあって軽い後味になっています。
ちょっと表面のナスが半生で火が通っていなかったのは、会社の昼時間で、お気遣いで急いでくださったのかもしれません。
カウンターでシェフがいろいろ解説してくださいました。パスタは、手打ち、のこだわりだそうです。たっぷり野菜を食べることが出来るし、チーズのおいしさが詰まった料理が堪能できて、ワインとチーズ好きにはたまらない時間です。
