Mitsuo Funaki: Profile Born in Aomori Prefecture in 1968 After graduating from culinary school, he trained at Restaurants in Tokyo, then moved to Europe in 1993, spending three years in Italy and one year in Switzerland, honing his skills at Michelin-starred hotels and Restaurants. After returning to Japan, he was involved in many Restaurants startups and served as head chef at each restaurant. In January 2018, he became the head chef of Ginza Gomei. Regardless of the genre of cooking, he strives to create dishes that are kind to the body.
