2022年8月25日に銀座にオープンしたばかりのモダンメキシカンのETHICA（エシカ）さんに伺いました。
エシカルをテーマにしたお店は食材を規格外の廃棄されているものを使用したり、内装も廃材を利用したりと環境に配慮した作りになっています。
店内はムーディーな落ち着いた雰囲気。デートはもちろんですが、女子会や記念日に利用するのもありだなと思いました。

◆ ワインのペアリング5種 ¥5500
エシカさんのお料理をいただいたらメキシコ料理の概念が覆って衝撃を受けました。メキシコ料理って勝手にジャンキーで辛い料理と思っていたんです。
でも、エシカさんのお料理をいただくと上品だし味付けも繊細だし、どのお料理も個性があってイメージと全く違ったんです。良い意味で期待を裏切られましたね。
アミューズは地球をイメージした一品で想像力を掻き立てられます。黄色と青色の2色のとうもろこしを使っていてアボカドのディップを付けて手でいただきます。
サステナブルマグロを使ったアグアチレロホはピリ辛なソースがスパイシーで刺激的ですね。
ピリ辛なソースがマグロにも野菜にも合います。ちなみにサステナブルマグロとは孵化から成魚まで完全養殖をしたマグロのことを言いますよ。
コチニータピビルのタコはユカタンの郷土料理のタコス。豚肉もタコスの生地もソースもどれも美味しい。
お肉に赤玉ねぎ、ハバネロソースが入っています。こちらも二色のとうもろこしを使用していますよ。
鹿のロース肉のローストも感動する美味しさでしたね。モレネグロと呼ばれる唐辛子をベースにチョコレートやバナナを入れた濃いソースがお肉にとても合うんですよね。
エビ、タコ、あさり、ソフトシェルクラブが入った魚介の炊き込みご飯も好みすぎて美味しい美味しいと何度も言いながら完食してしまいました。
デザートも面白かったですね。お米のアイスクリームなのですが、伝統揚げ菓子にアイスを乗っけていただくスタイルなんです。
ペアリングのワインがまた秀逸でお料理に実によく合いますね。最後までお酒もお料理も美味しくいただけるチョイスだなと感動しました。
ワインはニューメキシコのシャンパン、チリのソーヴィニヨン・ブラン、サンタバーバラのピノ・ノワールなど5種類のワインがセレクトされていましたよ。
