ナチュールとテキーラ、メスカルがあるレストラン！！
私の得意分野をカバーしている...
と、前々から行きたいと思っておりました。
食べログから1名予約ができなかったので
一休から日曜ランチ11:30〜のコースを予約。
店内はテーブル席とカウンター。かなり間隔は広くゆったりとしています。
Max20人強? シェフ・スーシェフ・サービス二人（ソムリエ1人）という体制。
BGMは90sReggae。有線かな？Lukie Dが流れて良い雰囲気。
ドリンクはメニューの裏側に記載、ワンドリンク必須。

食事が5品なのでどう考えても足りない。
”アルコールペアリング”という名前ならワイン以外も出るのかと思いきや、テキーラやメスカルはでないとのこと。
イノベーティブとは言いつつもメキシコ料理なので、そういうペアリングを期待していただけに…

ルッコラ、トマト（赤黄）、粉チーズ、ハイビスカスソース
彩よくフレッシュ。
New Player in Town/Rio Rocca
◼︎サステナブルマグロのアグアチレ/Aguachile de Atun
マグロ、きゅうり（レッドオニオンがたまに出てくる）、紅芯大根、ナスタチウムがちょこん。
アグアチレの味付けが優しい、というか、薄い。（個人的意見です）
ペアリングはグリューナヴェルトリーナ、魚合わせですがチレが薄いためワインが勝ってしまう。
シェフはお酒をあまり飲まない方なのだろうかと頭によぎる。

ブルーコーンのアントヒートスは香り豊かでほんとに好き。
ソースや具を何もつけずにそのままで十分美味しくて。
タコスの元となるマサ（とうもろこしの粉）を丸めて揚げ焼きしたようなイメージ。
ビーツで色付けたピンクの土台、てっぺんにはソイミート。

ロディティスという品種、初めて飲んだワイン。

鴨にかぼちゃの種のモレ（ソース）
鴨のキュイソンとモレのバランスがよく、噛み締めるほどに肉の味がジワっとでてきます。

MEDIDAでメヒカニートは初めて飲みました。
スモーキーとハーブ感としっかりした味わいに鴨の旨みがハマる。

時間をかけて火を入れたチキンとチーズ。
付け合わせにサルサとピクルス。(サルサ少ないよぉ…)
なんとこれが今日イチのお皿でした。
メスカルと合わせるとこれくらい味強く塩味があるとバチっとはまってきます。
◼︎本日のデザート/El Postre de Hoy
お皿の半分にホワイトチョコレートが削ってあり、
しっとり濃厚チーズケーキにつけながらいただきました。
甘さも程よく、Cafeと合わせて締まりました。
銀座という立地も加味し、
お洒落なイノベーティブメキシカンといった印象。
一風変わった会食にも使えそう。
