We receive the best tuna from suppliers who know our sushi. To bring out the flavor and aroma, the meat is brought to near room temperature before being squeezed, softening the meat and melting the fat, so the sweetness is the first thing that hits your tongue. Before eating further, please prepare your mouth with hot food. The sushi rice has just the right amount of acidity to reduce its character, and the grip is simple and slightly firm.
