Ibuki's specialty...real tuna

We use real tuna caught and farmed off the coast of Hiburijima, Uwajima, Ehime Prefecture. The quality of farmed tuna is said to be the best in the world. The tuna is aged in-restaurant and served in the best condition.

Ibuki's specialties: Shari and vinegar

The shari is Hitomebore from Iwate Prefecture. It has a soft texture and a well-balanced sweetness that you will never get tired of. The vinegar we use is a secret combination of red vinegar and rice vinegar that has a subtle sweetness and sourness.

Ibuki's specialty... soy sauce

Homemade Tosa soy sauce blended with tamari soy sauce, which has a concentrated flavor and aroma. By softening the aromatic saltiness of soy sauce, it brings out the flavor and mellowness and brings out the natural flavors of the fish.
