Sylvain Geoanna, originally from Paris, France, was exposed to food cultures from various parts of France from an early age, and was inspired by the wonderfulness of French cuisine born from the "terroir" of each region, which led him to start his career as a chef. He unravels the recipes left behind by Auguste Escoffier, known as the father of modern French cuisine, and serves French cuisine that he has arranged with his own sensibilities.
