ChefMr. Masayuki Sano - Japanese Kaiseki that reflects on the seasons
Born in Tokyo in 1969. He began his culinary career at the age of 21 and trained in the United States for two years. After returning to Japan, he studied ingredients in Hokkaido and trained at Japanese-style meal restaurant in Kyoto for 10 years. Since then, he has gained a wide range of experience including Italian Cuisine, French cuisine, and school cafeteria supervision. In 2016, “Shinsen Kappo Sanoya” opened. From the traditional style of Japanese kaiseki, which focuses on dashi stock and seasonal ingredients, to the use of techniques such as espuma and liquid nitrogen, he creates dishes that are enjoyable for the eyes, tongue, and soul.
