ChefGrand chef Nobuyuki Fukushima, who trained in France
He studied at Maison Lameloise, a three-star Michelin restaurant, and Auberge Fond Rose, a one-star restaurant. In 2019, he served as the second head chef at Restaurant CROSSTOKYO (Alasaka, Tokyo) and the first head chef at CROSSWONDERDINING in Iwaki, Fukushima Prefecture. After gaining training at a long-established high-end Chinese restaurant in Tokyo, he became the executive chef at RestaurantMOSSCROSSTOKYO (Shibuya, Tokyo) in 2024. He is Medicinal Food and a dashi sommelier.

``SHOKADO-9'' is a signature dish that will delight both your eyes and your palate from the beginning, and can be enjoyed with all courses. The nine bean plates, which are inspired by Shokado Bento (boxed lunch), which has its roots in kaiseki cuisine, are masterpieces that fully display the charm of ingredients from all over Japan that the chef has fallen in love with.
