The owner of the restaurant visited farms all over Japan and came across "Hagakure soft-shelled turtle". It is a top quality fish that costs about twice as much as the common soft-shelled turtle fish. The farm does not use any herbicides or pesticides, and the environment is in line with the natural cycle. The water is beautiful water containing microorganisms called EM bacteria. For feed, only special feed containing pesticide-free vegetables is used. It is truly Organic Food also soft-shelled turtle.
Food Soup with all the ingredients of soft-shelled turtle
Because it is rich in various nutrients, collagen, and amino acids, soft-soft-shelled turtle is said to have nutritional tonic and beauty effects. "Soup" allows you to enjoy all of them at once. The soup is made by skilled craftsmen by boiling 1 to 1.5 kg of delicious soft-shelled turtle for three hours and is packed with nutrients from soft-shelled turtle. You can fully enjoy the deep flavor, umami, and richness that only comes from peeling soft-shelled soft-shelled turtle.
