Métis Roppongi opened in February 2023, and was listed as a one-star restaurant in the Michelin Guide 2024 in less than a year. Chef Métis' omakase course combines the four seasons and ingredients of Japan with French tradition and philosophy. Please enjoy a creative and original dish created by Chef Suzuki, who has studied at numerous restaurants. “Wine pairing” involves pairing wine with each dish. Our sommelier will coordinate the wine for each of you by analyzing the food from various angles such as ingredients, production area, cooking method, seasoning, and texture.

ChefMr. Masatsugu Suzuki (Masatsugu Suzuki) -Métis Roppongi Head Chef-
He entered the world of cooking at the age of 15 and moved to France in 2005 at the age of 20. After training at a one-star Restaurants in Paris, he returned to France in 2008 and gained three years of experience at restaurants such as Stella Maris, Gerard Besson, and La Perouse, and returned to Japan in 2013 to become sous chef at Keisuke Matsushima, and was headhunted in 2015. Joined Global Dining. After launching the wood-grilled Restaurants "LIGNIS", he became executive officer and executive chef in 2021. In 2023, he will become the head chef of “Métis”.
ServiceMr. Atsushi Ogasawara (Manager of Métis Roppongi)
After working at several restaurant in Tokyo, including Taillevent Robuchon, moved to France in 2000. After deepening his studies in winemaking at the Faculty of Enology at the University of Bordeaux, he returned to Japan after working as a sommelier at four restaurant including "Bistro du Sommelier" (Paris) and "Auberge de l'Isle" (Alsace). After working at Beige Alain Ducasse (chef sommelier) and Esquith (deputy manager), he became Dominique Boucher (manager) in 2019. In 2023, he will be appointed as the manager of “Métis”.
