Soba noodles are delivered daily from our factory in Tokamachi, Niigata, and are smooth and nutritious. ``Hegi soba'' is made by combining three elements: 1) using seaweed as a binder, 2) using a flat colander called a ``hegi'', and 3) serving the noodles in bite-sized pieces. Skillful boiling and plating are skills that can only be achieved by craftsmen who have been training for many years. Please enjoy "Hegi Soba" which is healthy and full of minerals.
