The chicken we use at our restaurant is "Hinai Jidori" from Odate, Akita Prefecture, one of Japan's three major Jidori chickens, which is shipped directly from the production area. Although it is difficult to handle, it is attractive because it has a different flavor from the fat and skin than regular domestic chicken. We only use meat that has been raised for over 160 days, and we carefully adjust the handling, pasteurization, and cooking methods to suit each individual. We bring out the deliciousness of the ingredients to the fullest and offer them in courses that can be enjoyed with seasonal ingredients. Enjoy the carefully selected yakitori that can only be made at a small restaurant.

A number of exquisite dishes created by a chef who has been working with local chicken for over 10 years. In order to thoroughly pursue the shocking taste that you tasted for the first time at your training destination, we grill the meat while adjusting the amount of fat left and the cooking process depending on the part and condition.
