The most important thing about the signature menu [Gin Pote], which is also the name of the restaurant, is smoothness. Within 2 minutes of boiling the potatoes, peel them and mash them with a spatula to mix in the seasonings. It's important to stop the mixture before it reaches that point, as it won't be creamy unless it's still steaming, and if you mix it in too much, it will separate. You must master the exquisite sense of hands that cannot be obtained with machines. Although we cannot mass-produce it, we are making it so that everyone can enjoy it.

For the potatoes, I used make-in, which is sticky. Among them, we purchase "Hine-imo" which is old and ripened and has an increased sweetness. Other ingredients are cucumber, cabbage, and onion, and the seasonings are mayonnaise and sugar, which is very simple. Add a bite-sized [Gin Pote] wrapped in thinly sliced ``Iburigakko'' on the side, and sprinkle with ``Yukari'' to complete the dish. The unique creamy texture and Japanese taste leave a lasting impression. This is our restaurant's highly recommended and delicious potato salad that has been loved for many years.

We use domestically produced squid. First, we fill it with sticky rice and make ``squid rice'' using our seasoning. [Ginka] is cut into rounds, coated with batter, and fried. Finish with sweet stuffed sauce, top with furyuzu and Japanese buds and enjoy. The regular "Ikameshi" is delicious enough, but the slightly transformed "Ginka" is also delicious. Enjoy the chewy texture and aroma of squid, yuzu, and tree buds.
