トレイス系譜の新店。トレイスが素材1種類の引き算の極致を演出しているのに対してクイントは素材2種類の可能性を追求しています。
ハモは液体に昇華、ポルチーニ茸の濃厚なお吸い物、ニガウリの中で蒸された鮎、ハンバーグは噂通りの絶品、カレーの締めは単純にうれしい。
ペアリングもユニークな料理にしっかりと合わせたもの。
元々イノベーティブな料理が好きだけどそれも形態が定まってきて、新規性を感じなくなってきている自分のような輩に朗報となるお店でした。
