Beef Tongue The base of the tongue (tanmoto) is a soft, marbled part with fat on it.

shoulder

The arm part is called the "shoulder", and it is a collection of many muscles such as the zabuton, togarashi, misuji, and triangular muscles. Flesh color is dark. Rich in flavor ingredients. The taste is rich. This part is rich in extract components and gelatin.

Loin.

sirloin
