If you are flying, the fastest way is to rent a car from Hiroshima Airport and take the Tadanoumi Port to Moriko Port ferry. If you are using public transportation, there is a bus from Imabari, but the return trip ends around 6pm, so you will need to stay nearby. I recommend Matsuzaki Ryokan, which is about a 10-minute walk from the restaurant. |

Most of the fish used are from the local Seto Inland Sea. Even though they are generally considered to be common fish, by providing them with the exceptional freshness that can only be found locally, we are able to enhance the value of the fish and support the local fishing industry.
Environmental Protection Initiatives
Rather than catching fish randomly, we prioritize direct transactions with fishermen who target high-quality adult fish and add value by subjecting them to appropriate processing such as nerve-killing. We support fishermen who catch only the necessary amount of valuable fish, rather than traditional fishing methods that catch large amounts of fish that have no market value.

ChefJunji Akase - The best fish from the Seto Inland Sea in the best possible form
Born in Hakatajima, Ehime Prefecture in 1975. After graduating from a culinary school, he honed his skills at Senkichi Sushi in Osaka. He opened Akakichi in 2001. He traveled around Japan with Junichi Fujimoto, a fisherman from the Kurushima Straits, eating fish, and working to improve his fishing, fish processing, and cooking techniques. He was awarded one Michelin star in 2018.

The sushi at Akakichi cannot be discussed without mentioning the world-renowned fisherman Junichi Fujimoto. In addition to his outstanding fishing techniques that do not harm the fish, Fujimoto also uses his own unique processing method to transform the fish he catches into the finest ingredients. Akase and Fujimoto have been teaming up for the past 20 years, exploring and honing their skills in the pursuit of how to create the ultimate fish dishes, including sushi. Fujimoto was awarded the Terroir Award at the Japanese edition of the Goët Mi Yot 2021, which is given to producers who are taking on unique challenges.
