ChefMasaya Hirosawa – In pursuit of the purest deliciousness
Born in Aichi Prefecture in 1988. After graduating from Tsuji Culinary Institute, he trained at Akasaka Rikyu in Tokyo, before going on to serve as head chef at Renko in Gion, Kyoto, and Renshin in Kitashinchi, Osaka. After training at the Japanese-style restaurant Gion Sasagi and the French restaurant MOTOI, he spent six months training in Hong Kong, which led him to realize that there are no boundaries when it comes to cooking. Believing that it would be a waste to stick to Chinese cuisine, he began to incorporate his own style into his current style in pursuit of pure, delicious food.

The second dish on the course is kiln-grilled char siu, a specialty of Mr. Hirosawa that has been well-known since his days at Renshin. The Shimanto pork char siu is baked twice in an improved custom-made kiln, making it moist and tender, with a surprisingly crisp texture when freshly grilled. Making the most of the natural flavor of the ingredients, no garlic or pepper is used, and classic Chinese seasonings are used sparingly. The dish, which is full of seasonal vegetables and seafood, pairs well with the extensive wine selection, so be sure to try it.

A long and narrow approach facing Takoyakushi-dori leads to Restaurants in a detached house. In front of the counter seats is a well-maintained Japanese garden, creating an elegant space that exudes an extraordinary feeling. Although it is an open kitchen, you won't feel the stuffy heat that is typical of Chinese cuisine, as the restaurant was particular about the design of the oven and kitchen, with the aim of making the restaurant "comfortable." The mellow aroma of roasting char siu wafts from the oven installed in front of the counter, building anticipation for the next dish to be served.
