Based on modern Chinese cuisine, he incorporates Japanese-style meal and French cuisine techniques to propose dishes that express his "own style." The monthly changing course menu, which is centered around homemade char siu and seasonal ingredients, is full of fresh surprises that overturn the concept of Chinese cuisine.
