ChefYoshihiro Kitagawa - Unconventional Chinese cuisine
Born in Matsusaka, Mie Prefecture in 1973. After graduating from Tsuji Culinary Institute, he graduated from Tsuji Culinary Institute (Chinese cuisine). He trained at over 10 restaurants, starting with "Seikoen" in Yokohama. In 2015, he opened "Shibou Saikitagawa" in an old house on the outskirts of his hometown, Matsusaka. He does everything from preparation to cooking all by himself. He only accepts one group per day and operates by reservation. Reservations are booked up to two years in advance.
Food With the teachings of "Chinese cuisine that is easy on the stomach" in mind
Kitagawa-san has gained experience in the kitchens of many famous restaurants, but he was most influenced by the teachings of Kawada Yoshinori, the owner of Bunrin, a legendary restaurant of Nouvelle Chinois. He pursues "Chinese cuisine that is easy on the stomach" by using no artificial seasonings and by making the utmost effort to avoid unnecessary oils and strong sauces. The most symbolic dish is the "Colorful Seasonal Vegetable Appetizer" that appears at the beginning of the course. Seasonings are kept to a minimum, and the natural sweetness of the vegetables is brought out to the fullest by the way they are cut and cooked.

This Restaurants a modern renovated 100-year-old traditional house. It is a reservation-only restaurant that accepts only one group per day. In Hong Kong, the restaurant serves its guests in the "private kitchen" style. In a bright and spacious space overlooking the garden, you can enjoy a leisurely selection course meal.

...ihiro is inspired by the legendary Nouvelle Chinois master Kawata Yoshinori and strives to create "Chinese cuisine that is easy on the stomach." The ingredients are a selection of Mie's finest, including spiny lobster, Matsusaka beef, abalone, rock Oyster, Kishu Iwashimizu pork, dried shiitake mushrooms and king oysters from Taki Town. The Chinese cuisine, created with meticulous work that is almost honest, is sure to be a moving new experience.
