2018年、「カハラ」を開店して47年。
新しい食材、新しい料理、新しい組み合わせ、新しいプレゼンテーションを常に探求し続けられてきた森義文シェフの情熱とエネルギーは、カウンターに座ると、波動のように感じ取ることができます。
牛肉を5枚重ねて焼くミルフィーユステーキ、極細のそばに唐墨をかける、カチョカバロチーズに焼き海苔を合わせる、一口のシュー生地にカレーを入れる、白菜の根っこを使う、焼き鱧にアケガラシを使う、タスマニア産のマスタードを使う、淡雪塩を作るなど初めて森シェフがしたことが、
100近くあります。
この日、僕が驚いたのは、モッツアレラチーズのトッピングが、おろしショウガだったこと。チーズの旨味と油脂がショウガを合わせると、ふわっと引き立ちます。
2021年は、50周年。
記念ビデオの制作依頼を森さんからいただきました。
タイトルは決めています。

「カハラ」1971年創業。森さんは1944年生まれ。
「最近、お酒の量が減りました」
「今だに携帯電話も持ってなくて」
「最近、週1回は行っている串カツが、、、」
2015年に黄綬褒章を受賞され、
僕は何度かビデオを作らせてもらいました。
広島にロケに行ったり、飲みに行ったり。
その時にも感じたのが、実は安心感でした。
北新地には、カハラがある。
大阪には、カハラがある。
森さんが元気である。
という安心感。
つまり、森さんはNorth starなのだ。
