ChefMitsuyoshi Sato - Chef trained by Kei Kobayashi
Born in Mie Prefecture. Enrolled in Ecole Tsuji Osaka in 2006. After graduating, he worked at Nukitepa in Gotanda, Tokyo. In 2011, at the age of 24, he moved to France and trained at local restaurants in Toulouse and other areas. He has worked at Restaurant K in Paris since 2015. He will become chef of Maison K in January 2021. "Compared to Paris and Tokyo, Gotemba is wonderful because you are so close to the producers." He also says he likes the clean air and water of the area.

The specialty of Paris' Restaurants K, "Garden-style Seasonal Salad," opens the Maison K course. The main dish is 30 types of vegetables, mostly locally grown. Under the lemon-flavored white foam are four types of sauce, including fresh tomato. When you add the accompanying crumble and mix it together, it offers a truly diverse range of textures and flavors. Other flavor accents include smoked Kunugi trout from Gotemba, making this a dish that adheres to the idea of local production and consumption.

On a clear day, you can enjoy a magnificent view of Mt. Fuji right before your eyes. In addition, the area is surrounded by lush nature. It is also a 10-minute drive from the Gotemba Interchange on the Tomei Expressway. Gotemba City has been the location of Toraya's main factory since 1978, so it is a place with a deep connection to the company. The clear spring water from this area is essential to creating the flavors of Toraya. Desserts made with Toraya's bean paste are also a specialty of Maison K. You'll want to enjoy them at your leisure after a course full of local Shizuoka ingredients.
