While faithfully adhering to what he learned at the three-star Michelin restaurant Ishikawa in Kagurazaka, he has further evolved his dishes in Ginza, which are neat and elegant. He pays close attention to the "heating" that is the foundation of cooking, adjusting the heat while listening to the voice of the seasonal ingredients to bring out the best flavor. The beauty of the presentation, which resonates with the hearts of Japanese people, such as its height and color despite its simplicity, has also evolved further since his days in Kagurazaka.

There is only one course, selection simple omakase menu, centered around simple dishes. However, chef Mishina is flexible enough to respond to requests from regulars, just like a traditional Japanese restaurant. He also adds a playful touch to Japanese Cuisine, such as occasionally serving fried or simmered dishes as accompaniments to rice at the end of the meal. Opening the imposing wooden lattice door leads downstairs to counter seats and two private rooms. The counter seats are very immersive, with the contrast between the gentle-spoken Mr. Mishina and the lotus ink painting creating a truly relaxing space. The private rooms in the back, which are often used for entertaining and dining, can accommodate either six or four people and are so tranquil that you'll forget you're in Ginza.
