ChefKoji Kimura (Kimura Koji) A pioneer of aged sushi that brings out the flavor of fish
Born December 9, 1971. Originally from Tokyo. Born into a family of sushi chefs as the third generation. After completing his training at his family's sushi restaurant, which had been run by his grandfather, he decided to go independent, saying, "I want to make my own sushi." He came up with the idea of aging fish, but had no experience or precedent, so he started by feeling his way around. It took repeated trial and error and honing his senses before he came up with a method of aging. After about five years of tireless research and hard work, he created a unique style of aged sushi that had never been seen before.
