海老の頭や魚のアラはオーブンで焼いて出汁をとってごはんを炊いている。アスパラなどの野菜の皮も出汁にしてごはんを炊いている。野菜の端材でかき揚げにし、まかないにしたり、食材は無駄なく利用しております。
スタッフの白衣は「トゥルーコットン」の生地を購入し、オリジナルでつくっている。テイクアウトのお弁当用の容器は、プラスチックではなく竹の折り詰めにしています。以前はお出汁を引く際は、ペットボトルの水を使用しておりましたが、浄水器にさらにイオン交換膜のフィルターをつけてペットボトル削減に取り組んでいます。
