フードロスの削減
海老の頭や魚のアラはオーブンで焼いて出汁をとってごはんを炊いている。アスパラなどの野菜の皮も出汁にしてごはんを炊いている。野菜の端材でかき揚げにし、まかないにしたり、食材は無駄なく利用しております。
環境保護への取り組み
スタッフの白衣は「トゥルーコットン」の生地を購入し、オリジナルでつくっている。テイクアウトのお弁当用の容器は、プラスチックではなく竹の折り詰めにしています。以前はお出汁を引く際は、ペットボトルの水を使用しておりましたが、浄水器にさらにイオン交換膜のフィルターをつけてペットボトル削減に取り組んでいます。

Born in Tokyo in 1987, Yamazaki is a young and talented chef pioneering new frontiers in Japanese Cuisine. After eight years of training at the famous Akasaka restaurant "Morikawa," which requires an introduction, he went independent and opened "Yamazaki" in August 2018. Based on traditional Japanese Japanese-style meal techniques, he weaves together his experience in different genres, such as working at "Chiune" and "Aka" before opening his own restaurant, to create a variety of unique new Japanese Cuisine. He is also a certified sommelier, and adds color to his unique world of Japanese-style meal with carefully selected fine wines.

While the cuisine at this restaurant is based on traditional Japanese cuisine, its freedom to go beyond the boundaries of Japanese cuisine is what makes it so appealing. There are no hassun or sashimi dishes, and the specialty is charcoal-grilled soft-shelled turtle, which is full of fierce umami. The soup is made with carefully-brewed dashi stock, and the clay pot rice is topped with exquisite toppings. All of the dishes have a refined flavor that makes the most of the natural flavors of the ingredients. The ability to change the flavor from light to rich, light to heavy, is also simply amazing. The dishes, which are more impressive than one's imagination, are served fluently, captivating the eyes and tongues of the guests.

A plain wood counter, cedar shoji lanterns, plaster walls and ceiling... Passing through the vermilion shop curtain with the restaurant's name in white, you will find yourself in a sophisticated Japanese space. In addition to the eight seats at the L-shaped counter where you can watch the chef's handiwork, there is also a private room that can accommodate up to four people, where you can immerse yourself in the calm and pure world of learning from the past and creating something new, and savor the Japanese cuisine that is served to you.
