Opened in Gifu City in February 2009 as Restaurant Satoshi.F. Opened in Higashi Ginza in December 2016 under its current name. Relocated and reopened from Higashi Ginza in August 2021. Chef's choice course 40,000-42,000 yen (excluding tax and service charge) Mineral water was included in the course price. ひとことでいうと「野趣と洗練のヒュージョン」。
長らく行くことが叶わず、いつか行ってみたいと思っていたレストランのひとつ。
毎日のように外食しているが「予約が取れないレストラン」っていったいいくつあるのだろう。
かの有名店フルタの息子がやっている、というよりは既にチウネも人気度では引けをとらない凡百のレストランを凌駕する店として知られている。
淡いグレージュの店内に導かれてカウンターに対峙する。
中華のような和食のような「素材の香り」を引き立てる料理。全体的に水彩画のような料理。
原木椎茸と卵の料理はシグネチャーだけあって素晴らしかった。
